Onions are the most used vegetable in the world, but they are not for everyone. Some people find the flavour of onions to be too strong and so they avoid using the vegetables in their recipes. What a lot of people don’t know is that you can still enjoy their flavour and crunchiness, without it becoming too overwhelming.
Some onions are milder than others, but if you wish to make the flavour even more mild, you can soak sliced onions in ice for 20 to 30 minutes, or sprinkle them with vinegar or lemon. Onions soaked in ice also get very crisp, so this trick can give life to an older onion. Sprinkling them with vinegar or lemon will make them slightly softer but will also add a new flavour and reduce the natural bitter taste of the onion.
This is a good trick to use on older onions because, while some onions are naturally more pungent than others, all onions that have been in storage for a while are going to be much stronger flavoured than their younger counterparts.
One thing that this trick also helps with, is that soaking the onions will prevent them from making you cry. Some other tricks that help with this are: freezing the onion, using a super sharp knife to cut it or keep a piece of bread in your mouth.
