Soups have long been a culinary favourite, bringing warmth and nourishment to tables around the world. They offer a fantastic way to showcase seasonal produce, reduce food waste, and create comforting meals that cater to a variety of tastes.
Two of the most versatile vegetables in the soup world are carrots and potatoes. Packed with nutrients and subtle flavours, they form the foundation of countless recipes. To celebrate National Soup Month, why not try a simple yet delicious carrot and potato soup? It’s hearty, healthy, and perfect for satisfying both the palate and the soul.
Ingredients:
500g carrots, peeled and chopped into sticks; 300g potatoes, peeled and diced; 1 large onion, chopped; 2 garlic cloves, minced; 1 litre vegetable stock; 200ml double cream (optional, for extra richness); 2 tbsp olive oil; Salt and pepper to taste; Fresh parsley or chives for garnish.
Instructions:
Heat the olive oil in a large pot over medium heat. Add the onion and garlic, cooking until softened and fragrant. Add the carrots and potatoes, stirring to coat them in the oil. Cook for 5 minutes to enhance their natural sweetness. Pour in the vegetable stock, bring to a boil, and then reduce the heat. Simmer for 20-25 minutes, or until the vegetables are tender. Using a stick blender, puree the soup until smooth. For a chunkier texture, blend only half of the soup. Stir in the double cream, if using, and season with salt and pepper to taste. Serve hot, garnished with fresh parsley or chives.
